200g goose and cep mousse
4 beef tournedos
150g each
Fleur de sel
Freshly milled pepper

1kg goose and cep mousse
20 beef tournedos
150g each

Heat a griddle pan. When it is very hot, brown the tournedos for 3-5 minutes on each side (more or less, according to taste). Place the tournedos in the middle of the plate and immediately cover with a spoonful of goose and cep mousse, which will melt. Season and serve immediately.
