Rabbit and herb jelly bites

FOR 12 bites

2 little rounds of rabbit
a bunch of chervil
a bunch of flat-leaved parsley
1/2 bunch of tarragon
1 packet of powdered Madeira jelly
Wooden skewers

For 60 bites

10 rabbit little bites
5 bunches of chervil
5 bunches of flat-leaved parsley
3 bunches of tarragon
5 packets of powdered Madeira jelly

Preparation: 15 min.

Cooking: 10 min.

The night before, prepare the herb jelly: chop the herbs. Prepare the jelly according to the instructions on the packet. When it is ready, leave to cool and add chopped herbs. Pour into small rectangular moulds (or other). On the day: carefully turn out jelly onto a wooden chopping board and cut into squares. Cut squares of little rabbit bites, bigger than the jelly squares. Hold the jelly and the little bites together with a wooden skewer. Refrigerate until serving.
