Farfalle with ham rillettes du Mans

For 4 people

170g ham rillettes du Mans
400g farfalles (bow-shaped pasta)
100g fresh or ready-grated parmesan
Freshly milled pepper

For 20 people

850g ham rillettes du Mans
2kg farfalles (bow-shaped pasta)
500g fresh or ready-grated parmesan
Freshly milled pepper

Cooking: 15 min.

Cook the farfalle in a large saucepan of boiling water for 7-10 mins according to taste. In the meantime, gently heat the rillettes in a pan and remove surplus fat. Drain the pasta, rinse in cold water to stop them cooking then add to the pan with the rillettes. Season with pepper and keep warm. Serve hot, in a warmed dish. Cover with shavings of parmesan or grated parmesan.
